1 tsp salt
1Egg White
1 tbsp corn flour
5 tbsp vegetable oil
1 chicken about 1.5 Kg (3 lb)cut through the bone into 24 bite sized pieces
2 slice root ginger peeled and finely chopped
2 chilies finely chopped
2dried chilies finely chopped
1 tbsp soy sauce
1 tbsp wine vinegar

1. Mix together the salt egg white corn flour and 1 table spoon of oil Toss the chicken pieces in this.
2. Heat the remaining oil in a wok until smoking and the ginger and chilies stir-fry for about 30 seconds then add the chicken stir for another 5-6 minutes.
3. Mix together the soy sauce and vinegar and pour into wok Stir fry for another minute then serve.
