CHOC-ORANGE MOUSSE
 

4 eggs separated
¼ cup /60 ml /2fl oz orange concentrate
½ cup /100 g/3-1/2 oz caster sugar
200 g/6-1/2 oz dark chocolate broken into pieces
1-1/2 cups/375 ml /12 fl oz cream (double)

 
1. Beat egg yolks orange juice and half the sugar together until thick and creamy.
2. Place chocolate and cream in a heat proof boor place a saucepan of simmering water cook stirring until chocolate melts and mixture is combined Beat into egg yolk mixture.
3. Beat egg whites and remaining sugar together until peaks form Fold chocolate mixture into egg white mixture mix until just combined Divide between serving glasses Chill for at least 1 hour before serving.
